Nebbiolo Verjus is our bright and vibrant take on a classic kitchen staple, made from unripe Nebbiolo grapes hand picked from our friends vineyard in the Grampians. Traditionally used long before lemons were common, verjus brings a gentle, elegant acidity that lifts food and drink without overpowering it. Fresh, crisp and beautifully balanced, this is a versatile pantry bottle for dressings, sauces, marinades and finishing dishes, and it is equally at home splashed over ice with soda water for a refreshing non alcoholic serve.

This is a very limited release, available initially to subscribers only. We wanted to share it first with the people who have supported Grampians Vinegar and followed our journey. Nebbiolo Verjus captures a sense of season, place and possibility, with the savoury brightness Nebbiolo brings in its unripe form. Use it anywhere you want freshness and restraint, from seafood and roast vegetables to spring salads and simple evening spritzes.
