What started as an experiment turned into something bigger than we imagined.
Last year, Tart Tonic began as a simple idea: could we save surplus Shiraz grapes and turn them into something delicious, useful, and sustainable?
The answer was a resounding yes.
Our first small production run sold out, exceeded demand forecasts, and went on to win Gold at the Royal Melbourne Show Fine Food Awards, confirming that this wasn’t just a good idea, but a genuinely standout product.
Now, we’re ready to go full production.
Why we’re crowdfunding
Taking a beverage from small-batch success to commercial production comes with substantial upfront costs — long before a single bottle is filled.
Bottles, labels, ingredients, packaging, compliance, and production setup require over $30,000 in investment upfront, before any sales are realised. For a small regional producer, that’s a big leap.

When will Tart Tonic be made and shipped?
Shiraz grapes for Tart Tonic will be harvested during early to mid-April, in line with Grampians vintage, allowing us to rescue surplus fruit at its peak. Production begins immediately after harvest, with grapes processed, blended with our house-made Shiraz vinegar, then bottled and packaged locally. The first batch of Tart Tonic is expected to be ready for dispatch toward the end of April. Backers will receive regular updates throughout the campaign, harvest, production, and shipping stages, so you can follow the journey from rescued grapes to finished bottles.
