Returning to the land

After returning from a 10-year stint in Canada, Amanda and Anthony Kumnick settled on 1100 acres with an 1800s Historic Homestead in the heart of the Grampians, seeking a life connected to family, community and real food. They established Greenvale Farm, earning national recognition for their award-winning heritage rare breed pork and smallgoods. Their focus on ethical bio-dynamic farming, sustainability and true paddock-to-plate quality helped shape a strong reputation for integrity and innovation in regional food.

Their journey continued with Great Western Granary, an artisan sourdough bakery in the heart of the Grampians working with local biodynamic grain farmers. Each loaf celebrates traditional methods and the rich agricultural character of the Grampians and the Wimmera region.

Giving delicious wine a new life

Grampians Vinegar was born from conversations and collaborations in the wine making circles of Great Western.  Considering the surplus of red wine, created due to changes in the buying habits on a local and global level a plan developed to  give wine a second life through careful natural fermentation creating vinegar that celebrates the region, the grape and the wine that it came from.

Turning Waste Into Gold

Later, while helping a friend at a local vineyard prune and discard surplus Shiraz grapes, Anthony and Amanda were inspired to create Tart Tonic, a Shiraz shrub made with Shiraz grapes combined  with Grampians Shiraz vinegar. The product  became instantly award-winning, celebrated for its bold, refreshing flavours and versatility.

Today, Amanda and Anthony continue to innovate, crafting new vinegar-based products that capture the flavour, creativity and spirit of the Grampians.
