Shiraz Vincotto is our rich, deeply concentrated expression of Grampians fruit, made by slowly reducing Shiraz grape juice into a dark, luscious syrup with layered sweetness, gentle acidity and remarkable depth. It brings notes of raisin, plum and spice, with a smooth finish that makes it equally suited to savoury and sweet dishes. Drizzle it over roasted vegetables, aged cheese or grilled meats, use it to deepen sauces and dressings, or serve it simply over strawberries, ice cream or yoghurt or even in a gin or vodka cocktail or mocktail.

This is a very limited release, available initially to subscribers only. We wanted to offer it first to the people who have supported Grampians Vinegar and followed our journey from the beginning. Shiraz Vincotto is a small batch product that captures the generosity and intensity of Shiraz in a completely different form, bringing warmth, richness and a touch of indulgence to the table.
